nVidia drivers updated earlier today. According to all GPU based projects, I have a GPU missing message.

It's funny. With each driver update, I can either get BOINC GPU WUs to work, or F@H GPU WUs, but not both. This time around, F@H is chugging away happily.

Any solutions that don't involve a driver rollback? I'm guessing not. And no, BOINC is not running as a service.

How did the update happen? Was it launched by Windows? In that case you need to get the driver directly from Nvidia site and reinstall it. Best to do a "clean install" or use DDU (Display Driver Uninstaller).

Nope. Manual update from nVidia with a clean install is how I always do them.
